Junmai Sparkling Sake from Japan's Ninki Ichi represents a lively and graceful interpretation of sake in a sparkling version, produced through a re-fermentation in the bottle as is the case for sparkling wines of the Ancestral Method. The sparkling sake typology has a fairly recent history, beginning in the 1990s. However, these sakes have seen exponential appreciation from consumers all over the world, who are fascinated by the vivacious character of this twice-fermented beverage.

Ninki Ichi Junmai Sparkling Sake is made from only rice of the Chiyonishiki variety grown within the Fukushima Prefecture. This is milled to a degree of polish of 60%, in the Junmai category therefore, and then combined with water from underground streams fed by the springs of Mount Adatara, which have a high mineral content. This is followed by the steaming process and then the complex fermentation by the Koji mushroom and yeasts. The second fermentation takes place in the bottle in order to develop a light and spontaneous effervescence, thus excluding artificial additions of carbon dioxide.

To the eye, the Ninki Ichi Junmai Sparkling Sake presents itself with a transparent appearance and fine bubbles. Hints of plum ume, apple and pear follow one another on the nose, supported by evocative notes of white yoghurt. On the palate it shows a lively effervescence, a light body and a marked acidity to support the suave sweetness, elements that anticipate the pleasant and delicate finish. The producer's own advice is to serve this sparkling sake at a cold temperature, as an aperitif, to enhance its irresistible dynamism and freshness.
