Bourgogne Passe-Tout-Grains Maison Lou Dumont - Koji Nakada 2023
The Bourgogne Passe-Tout-Grains by Maison Lou Dumont - Koji Nakada is a Burgundian red made from Pinot Noir and Gamay that expresses freshness, smoothness, and juiciness. It originates in the Côte d'Or on marl, clay, and limestone soils. The name of the Appellation ‘Passe-Tout-Grains’, which literally means ‘all grapes pass’, recalls an ancient peasant tradition of Burgundy that involved the joint harvesting and winemaking of the different red grape varieties present in the vineyards, without separating them. The spontaneous fermentation with indigenous yeasts and the short maceration on the skins of 5 days preserve fragrance and drinkability, while the aging in wood for 7 months adds personality to the wine. On the nose, notes of small red fruits and slight hints of underbrush emerge. The sip is slender, fresh, and juicy, with delicate tannins and a pleasant smoothness. It pairs well with a country-style terrine from Burgundy
