Il Monte Caro's Amarone della Valpolicella 'Fogo' is the result of a combination of personal vision and tradition, with three months of slow drying thanks to the natural winds of the mountain. The choice of ageing in steel allows the aroma of the grapes to remain unmasked, focusing on freshness and balsamic notes. The nose is intense, with hints of dried fruit and a balsamic finish, while the palate is warm, deep and persistent. It pairs well with red meats and mature cheeses in dishes such as braised beef
